I have REGULAR white flour and I really don’t want to have to look for/buy "SPECIAL" flour just to make a loaf of bread! I just got a new bread machine and am really anxious to try it out….but I’d like to just be able to work w/what I’ve got in my kitchen already.

Anybody have a recipe that they’ve used themselves? Please don’t send "links"….I’ve already done some searches….I’m looking for a recipe w/personal experience behind it!
ok…woops-another thought….what if you don’t have dry milk…can you substitute w/regular milk and if so, do you increase or decrease the qty?

I am new at using a bread machine and I love it for mixing the ingredients and doing the dough cycle. I don’t like the shape of the bread though. So, what I like to do is after the dough cycle remove the dough and place it in a loaf pan, cover and let rise for about 30-45 minutes. Then, bake it in the oven. I have one recipe that tells me that I can bake at 350 degrees for 40 minutes if I don’t want to bake the loaf in the bread machine but most recipes don’t include this information. Is there a general rule about how long to bake a loaf of bread and at what temperature or any other way of figuring it out?

every loaf of bread is either a paving brick or the top is peaked dry and custy and the inside gooey… same machine same recipes just totally poor results

My problem is I only have 1 C of white flour

I do have a LOT of whole wheat flour but haven’t found a wheat recipe that I can use. I have no honey in the house, no maple syrup.

I only have 1 shot at this to get a loaf of bread..
I ended up finding a recipe online.

And the type of bread machine doesn’t make any difference but I forgot to say I have a little 1lb machine LOL

I have gone to ALL the "online" recipe sites and baked dozens of their recipes only to be disappointed. I know I might be expecting too much when I simply want a light airy bread (from a bread machine) but some of the recipes have produced actual bricks of bread…. uuuug ! ALL of the recipes made claims of them being the best too so perhaps bread machine bread just isn’t for me.

Any advice towards a lighter, airier(<is that a word? ha ha) bread from this stupid machine would be soooooooo appreciated. I don’t need advice on experimenting with different flours, grains, yeasts etc… I have done ALL that over a 17 year period of owning this darn machine… A recipe would be great, one that YOU have tried and never failed. Hard to believe I have been a chef for 26 years and can’t get a decent loaf of bread from a machine, good grief !!!

We have a large family and we go through bread like crazy. Has anyone done the math to determine if a homemade loaf of bread maker bread is cheaper than a store bought loaf? I know it tastes better. I just want to know if it’s worth the trouble.
