I don’t think you can get true artisan bread from the bread maker. I make all kinds of different artisan breads all the time (as a matter of fact tonight I put on a loaf of sourdough, as well as rosemary bread) and by far the best recipe and method (and the easiest ever) came from breadtopia.com it is an 18 hour proofing period, and considered a "no knead" method that is 4 ingredients:
Flour
Salt
Yeast
Water
The basic recipe says you combine approx 3 cups flour, 1 1/2 teaspoons salt and 1/4 teaspoon of yeast (no that isn’t a typo). Mix the three ingredients in a glass or plastic bowl (NO METAL) and add approx 1 1/2 cups tepid water until you have a wet sticky dough. Cover and let sit on the counter in a warm spot for approx 18 hours. Turn your dough out after 18 hours onto a well floured surface, covering the dough with flour. Stretch it out to the size of a kitchen towel (or there abouts) and fold in thirds, and then fold in thirds lengthwise. Put in a proofing basket (or a well oiled bowl) for 2 more hours and let rest. I bake them at 450 in a dutch oven (cast iron covered pot) for 30 min, removing the lid for the last 5 min or so.
Another idea is the book "Artisan bread in 5 min a day" which is the same concept. Save the money and watch the free video’s on breadtopia.com
I made my own sour dough starter and use all organic materials so I make high quality artisan breads all the time!
You probably want this recipe for french bread:
9 oz of water
2 teaspoons margarine or butter, softened
3.25 cups bread machine flour
1 tablespoon sugar
1.5 teaspoon salt
2.75 teaspoons regular active dry yeast OR
2.75 teaspoons bread machine or quick-acting active dry yeast
Bake on French Bread Cycle
The link to the site is below. They have a lot of great recipes. I’ve added various herbs to my bread machine bread to vary the flavors. Try it. Some of my favorites are rosemary, basil ,thyme, garlic, Fines herbs, and Italian herb blends. Just be sure your bread machine can handle the amount of dough.
I wanted to include a second link with more recipes for your machine. Here it is: http://www.bhg.com/home/Bread-Machine-Recipes.html
